Ingredients

1 lb (450 g) fresh carrots, peeled and cut into fry shapes

3 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional, for a smoky flavor)

Fresh lemon juice, for serving (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To make cleanup a breeze, line a baking sheet with parchment paper.

Make the Garlic Butter: In a small saucepan, melt the unsalted butter over low heat. Once fully melted, add the minced garlic, cooking for about 1-2 minutes, stirring constantly until it becomes fragrant but remains unbrowned. Remove from heat and mix in the chopped parsley, sea salt, black pepper, and smoked paprika if you choose to add that lovely smoky flavor.

Coat the Carrots: In a large mixing bowl, place the carrot fries. Pour the prepared garlic butter mixture over them, then toss the carrots well to ensure each fry is evenly coated with the buttery goodness.

Arrange for Roasting: Transfer the coated carrot fries onto the lined baking sheet, spreading them out in a single layer. Ensure there’s enough space between each fry for optimal roasting.

Roast to Perfection: Place the baking sheet into the preheated oven and roast the fries for about 20-25 minutes. Halfway through the roasting time, gently flip the fries to promote even browning. They should be perfectly golden and tender when finished.

Finish and Serve: Once the carrot fries are roasted to perfection, take them out of the oven. For an added burst of flavor, squeeze fresh lemon juice over the hot fries (if desired), and sprinkle with extra parsley for a bright presentation. Serve warm as a delightful side dish or a tasty snack!
