Ingredients

For the Garlic Butter:

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

Salt and freshly ground black pepper, to taste

For the Pizza:

1 pizza dough (store-bought or homemade)

1 cup mushrooms, sliced (choose button, cremini, or shiitake according to preference)

2 cups fresh spinach leaves, washed and dried

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for added heat)

Instructions

Preheat the Oven: Begin by preheating your oven to 475°F (245°C). If you plan to use a pizza stone, make sure to place it in the oven to heat up along with it.

Make the Garlic Butter: In a small saucepan, melt the unsalted butter over low heat. Once melted, add the minced garlic and let it gently sauté for about 2-3 minutes, until aromatic but not browned. Stir in the freshly chopped parsley, and season the mixture with salt and freshly ground black pepper. Remove from heat and set aside for later use.

Sauté the Mushrooms and Spinach: Heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté them for approximately 5-7 minutes, or until they turn golden brown and tender. Season with a pinch of salt, freshly cracked black pepper, and dried oregano. Then, add the fresh spinach and cook for an additional 2-3 minutes, until the spinach is just wilted. Remove the skillet from heat and set aside.

Prepare the Pizza Base: On a lightly floured surface, roll out your pizza dough to your desired thickness—thinner for a crispier crust, or thicker for a chewier bite. Carefully transfer the rolled-out dough to a baking sheet or a pizza peel if you are using a pizza stone.

Assemble the Pizza: Generously brush the garlic butter over the entire surface of the pizza dough, ensuring it’s well coated. Evenly spread the sautéed mushrooms and wilted spinach on top. Follow this by sprinkling the shredded mozzarella cheese and grated Parmesan cheese evenly over the vegetables. If you enjoy a hint of spice, add a light sprinkle of red pepper flakes at this stage.

Bake the Pizza: Slide the pizza onto the preheated oven (or directly onto the hot pizza stone). Bake for 12-15 minutes, or until the crust is golden brown and crispy, and the cheese is melted and bubbling.

Finish and Serve: Once the pizza is perfectly baked, remove it from the oven. Allow it to cool for a few minutes before slicing into wedges. For an extra touch, you may drizzle a little more garlic butter or olive oil on top just before serving.

Optional Presentation Tips: Serve the pizza hot, garnished with extra parsley or a sprinkle of Parmesan cheese. Pair with a fresh side salad for a complete meal!
