2 medium zucchinis, spiralized into noodles

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika (for added depth)

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

¼ cup finely grated Parmesan cheese

Fresh parsley, chopped, for garnish

Juice of 1 lemon

Prepare the Zucchini Noodles: Using a spiralizer, create zucchini noodles, then set them aside. For a drier texture, sprinkle the noodles with salt and let them rest in a colander for about 10 minutes to draw out excess moisture. Rinse and pat dry if desired.

    Cook the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Once melted, add the chicken pieces and season with Italian seasoning, paprika, salt, and pepper. Sauté the chicken for approximately 6-8 minutes, or until it reaches an internal temperature of 165°F, turning golden brown. Once cooked, remove the chicken from the skillet and transfer it to a plate.

      Prepare the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once the butter is melted, stir in the minced garlic and sauté for 1-2 minutes, being careful not to let it brown, as you want it fragrant and slightly softened.

        Combine Ingredients: Add the halved cherry tomatoes into the skillet with the garlic butter. Sauté for an additional 2-3 minutes until the tomatoes begin to soften and release their juices. Return the cooked chicken to the skillet, stirring gently to combine the ingredients well.

          Incorporate Zucchini Noodles: Add the spiralized zucchini noodles to the skillet, then drizzle the fresh lemon juice over the mixture. Toss everything together gently for about 3-4 minutes until the noodles are heated through but retain a slight crunch.

            Finish and Serve: Remove the skillet from heat. Sprinkle the grated Parmesan cheese over the entire dish and toss again to ensure everything is evenly coated. Garnish with freshly chopped parsley for a vibrant touch before serving.
