Ingredients

1 lb boneless, skinless chicken breasts, diced

1 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper, to taste

1 cup pizza sauce

1 ½ cups shredded mozzarella cheese

1 cup mixed fresh fruit (e.g., strawberries, blueberries, kiwi, and banana), chopped

¼ cup cream cheese, softened

2 tbsp honey or maple syrup

Fresh mint leaves for garnish

Instructions

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced chicken to the skillet. Sprinkle in the garlic powder, onion powder, Italian seasoning, and season with salt and pepper. Cook, stirring occasionally, for about 6-8 minutes or until the chicken pieces are golden brown and fully cooked.

Add the Sauce: Reduce the heat to low and pour the pizza sauce over the cooked chicken. Stir gently to ensure the chicken is evenly coated with the sauce. Allow the mixture to simmer for 3-4 minutes until it is heated through and fragrant.

Cheesy Topping: Evenly sprinkle the shredded mozzarella cheese over the chicken and sauce mixture in the skillet. Cover the skillet with a lid and let it sit for about 2-3 minutes, or until the cheese has melted and is bubbly.

Prepare the Fruit Topping: While the cheese melts, take a small mixing bowl and combine the softened cream cheese with the honey or maple syrup. Mix well until smooth and fully blended.

Assembly: Once the cheese is melted, carefully remove the skillet from the heat. Top the cheesy chicken and sauce with the chopped mixed fresh fruit. Drizzle the cream cheese mixture generously over the top, creating a creamy contrast with the vibrant fruits.

Garnish and Serve: Finish off the dish by sprinkling fresh mint leaves on top for added flavor and a pop of color. Serve the dish warm straight from the skillet, allowing everyone to scoop their own portions and enjoy!
