1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1/2 cup milk (dairy or plant-based alternative)

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 cup fresh strawberries, diced

1 cup plain or vanilla frozen yogurt

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a standard muffin pan by greasing it lightly or lining it with muffin liners to prevent sticking.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, rolled oats, granulated sugar, brown sugar, baking powder, baking soda, and salt. Ensure the mixture is well combined and there are no clumps.

      Combine Wet Ingredients: In a separate bowl, beat one large egg until fluffy. Then add in the milk, vegetable oil, and vanilla extract. Mix thoroughly until the mixture is smooth and homogenous.

        Combine Wet and Dry Ingredients: Carefully pour the wet mixture into the bowl of dry ingredients. Stir gently with a spatula or wooden spoon until just combined; do not overmix. It's perfectly fine to leave a few lumps in the batter.

          Incorporate Strawberries: Using a spatula, gently fold in the diced strawberries into the batter, ensuring they’re evenly distributed without smashing them.

            Fill Muffin Pan: Using a spoon or a measuring cup, fill each muffin cavity up to halfway with the batter. Smooth the surface slightly with the back of the spoon to create an even layer.

              Add Frozen Yogurt: Take a heaping teaspoon of frozen yogurt and place it in the center of each muffin cavity. Then, top the yogurt with more muffin batter, ensuring the yogurt is completely covered.

                  Cool: After baking, remove the muffins from the oven, allowing them to cool in the pan for about 5 minutes before transferring each muffin to a wire rack to cool completely.
