Ingredients

2 cups plain Greek yogurt

1 cup mini marshmallows

1/2 cup chocolate chips (choose milk or dark depending on preference)

1/4 cup honey or maple syrup

1/2 cup crushed graham crackers

A pinch of salt

1 teaspoon vanilla extract

Instructions

Create the Yogurt Base: In a spacious mixing bowl, combine the plain Greek yogurt with the honey or maple syrup, vanilla extract, and a pinch of salt. Whisk or stir vigorously until the mixture is smooth, creamy, and well blended.

Incorporate Tasty Add-ins: Carefully fold in the mini marshmallows, chocolate chips, and crushed graham crackers into the yogurt base. Take your time to ensure everything is evenly distributed without breaking the marshmallows.

Prepare Your Molds: Take a mini muffin tray or an ice cube tray and line it with parchment paper or use silicone molds for easier removal. This will ensure none of the deliciousness sticks!

Fill the Molds: Use a spoon to evenly distribute the yogurt mixture into each section of the prepared molds. Press down gently on the mixture to pack it in tightly, which will help maintain form once frozen.

Freeze the Coins: Carefully place the filled molds in the freezer. Allow them to freeze for a minimum of 4 to 6 hours, or until they are completely solid.

Release from Molds: After they have frozen solid, take the molds out of the freezer. To remove the s'mores ice cream coins, gently flex the molds or, if they’re stuck, run warm water over the outside of the molds for a few moments to ease the coins out.

Serve and Enjoy: These ice cream coins make for a delightful treat right away! Enjoy them as refreshing bites or store any leftovers in an airtight container in the freezer for a delicious dessert anytime.
