Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon vanilla extract

1 cup mixed berries (a blend of strawberries, blueberries, and raspberries)

1/2 cup chocolate chips (choose dark or milk, depending on your taste)

1 cup granola or crushed graham crackers (for a delightful crunch)

12 soft cookies (chocolate chip or oatmeal cookies are ideal)

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, add the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Using a whisk or a spatula, blend the ingredients together until the mixture is smooth and fully combined.

Incorporate the Berries and Chocolate: Gently fold in the mixed berries along with the chocolate chips into the yogurt mixture. Take care to evenly distribute the berries without breaking them.

Assemble the Sandwiches: Choose one cookie and generously spread a thick layer of the yogurt mixture on the flat side. Place a second cookie on top, pressing down lightly to form a sandwich. Repeat this assembly process with the remaining cookies and yogurt mixture until all sandwiches are prepared.

Coat with Crunch: On a flat plate, scatter the granola or crushed graham crackers. Take each assembled yogurt sandwich and roll the edges in the granola/cracker mixture, ensuring the bits adhere well for added texture.

Freeze: Line a baking sheet with parchment paper and carefully place each yogurt sandwich on it. Transfer the baking sheet to the freezer and let the sandwiches freeze for 4 to 6 hours, or until they are completely firm.

Enjoy: Once frozen solid, the sandwiches can be enjoyed immediately. Alternatively, store any leftovers in an airtight container, separating layers with parchment paper to prevent sticking, for up to one week.
