Ingredients

1 cup Greek yogurt (choose plain or vanilla)

1/2 cup pumpkin puree (ensure it's pure pumpkin, not the pie filling)

1/4 cup honey or maple syrup (your choice for sweetness)

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice (or blend of cinnamon, nutmeg, and ginger)

1/2 teaspoon salt

1 cup almond flour (substitute with your preferred flour if desired)

1/4 teaspoon baking powder

1/2 cup mini chocolate chips (optional but recommended for extra sweetness)

Cooking spray or coconut oil for greasing the donut pan

Instructions

Prep the Donut Pan: Preheat your oven to 350°F (175°C). Lightly coat a mini donut pan with cooking spray or gently grease it with coconut oil to ensure the donut bites won't stick after baking.

Mix Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, pumpkin puree, honey or maple syrup, vanilla extract, and pumpkin pie spice. Use a whisk to mix these ingredients until the mixture is smooth and creamy with no lumps.

Combine Dry Ingredients: In a separate bowl, whisk together the almond flour, baking powder, and salt. Ensure these dry ingredients are well blended to avoid clumps.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients. Stir gently until just combined, taking care not to overmix. If you like, fold in the mini chocolate chips at this stage for a delightful chocolatey touch.

Fill the Donut Pan: Using a piping bag or a small spoon, carefully fill each cavity of the donut pan about two-thirds full with the batter to allow space for rising.

Bake: Place the filled donut pan into your preheated oven and bake for 10-12 minutes. The donut bites should turn lightly golden, and a toothpick inserted into the center should come out clean when they are done.

Cool: Once baked, remove the pan from the oven and let it cool for approximately 5 minutes. After cooling slightly, carefully extract the donut bites from the pan and transfer them to a wire rack to cool completely.

Freeze: Once fully cooled, arrange the donut bites on a parchment-lined baking sheet. Place the tray in the freezer for about 1-2 hours, or until the bites are completely frozen solid.

Serve and Enjoy: Your frozen yogurt pumpkin spice donut bites are ready to be enjoyed! They can be eaten straight from the freezer or left out for a few minutes to soften for a different texture. They're a perfect treat or snack for any time of the year!
