Ingredients

1 cup plain Greek yogurt (or substitute with your favorite dairy-free yogurt)

2 tablespoons unsweetened cocoa powder

2 tablespoons honey or maple syrup (adjust according to your sweetness preference)

1 tablespoon instant coffee granules

1 teaspoon pure vanilla extract

1/4 teaspoon sea salt

1 cup granola (choose your favorite variety, ideally with nuts and seeds)

1/2 cup dark chocolate chips or dairy-free chocolate chips (optional, for drizzling)

Instructions

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, combine the plain Greek yogurt, cocoa powder, honey (or maple syrup), instant coffee granules, vanilla extract, and sea salt. Use a whisk or spatula to mix the ingredients thoroughly until you achieve a smooth and well-combined chocolatey mixture.

Incorporate Granola: Gently fold the granola into the chocolate-yogurt mixture, ensuring every piece is evenly coated while being careful not to break the granola clusters apart.

Form Clusters: Using a tablespoon or a small ice cream scoop, scoop out the mixture and drop spoonfuls onto a parchment-lined baking sheet. Shape them into small clusters for easier freezing and serving.

Freeze: Transfer the baking sheet to the freezer and allow the clusters to freeze for a minimum of 3 to 4 hours, or until they become firm to the touch.

Optional Chocolate Drizzle: If you desire a chocolate drizzle, melt the dark chocolate chips in a microwave-safe bowl. Heat in 20-second increments, stirring thoroughly after each interval until the chocolate is smooth and fully melted. Once the yogurt clusters are completely frozen, take them out of the freezer and drizzle the melted chocolate over the top of each cluster. Place the baking sheet back in the freezer for an additional 30 minutes to let the chocolate set.

Serve: After the final freeze, remove the clusters from the baking sheet and store them in an airtight container in the freezer. Enjoy the clusters directly from the freezer for a refreshing and delightful treat!

Prep Time: 15 minutes | Total Time: 4-5 hours freeze time | Yield: 24 clusters | Servings: 8

Presentation Tips: For an appealing presentation, serve the clusters in small bowls or cups, and feel free to sprinkle some extra granola or chocolate shavings on top for garnish!
