Instructions

Prepare the Cookie Dough Layer:

    - In a large mixing bowl, mix together the almond flour, oat flour, coconut sugar, and sea salt until well combined.

      - Add in the maple syrup, almond or peanut butter, and vanilla extract. Stir the mixture until a cohesive dough forms.

        - Gently fold in the vegan chocolate chips to ensure they are evenly distributed throughout the dough.

          - Line an 8x8 inch (or comparable size) baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

            - Evenly spread the cookie dough mixture into the bottom of the prepared dish, pressing down firmly to create a solid layer. Place the dish in the freezer while you prepare the matcha layer.

              Make the Matcha Frozen Yogurt:

                - In a medium-sized bowl, whisk together the Greek yogurt, honey or agave syrup, matcha powder, vanilla extract, and a pinch of sea salt until the mixture is smooth and well combined.

                  - Taste the mixture and adjust the sweetness or matcha intensity according to your preference.

                    Assemble the Bars:

                      - Take the cookie dough base out of the freezer and pour the matcha frozen yogurt mixture evenly over the cookie dough layer, using a spatula to smooth it out.

                        - For added flavor and texture, sprinkle crushed walnuts, additional chocolate chips, or a light dusting of extra matcha powder on top as desired.

                          Freeze the Bars:

                            - Cover the baking dish with plastic wrap or aluminum foil and place it back into the freezer. Freeze for a minimum of 4-6 hours, or until the bars are solid.

                              Slice and Serve:

                                - Once thoroughly frozen, use the parchment paper overhang to lift the bars out of the baking dish. Transfer them to a cutting board and slice into squares or rectangles.

                                  - Serve immediately, or if you have leftovers, store them in an airtight container in the freezer for future enjoyment.
