Ingredients

1 cup fresh strawberries, hulled and sliced into thin rounds

1 cup fresh kiwi, peeled and diced into small cubes

1 cup plain Greek yogurt (or your preferred yogurt variety)

2 tablespoons honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon vanilla extract

A pinch of salt

Non-stick silicone molds or ice cube trays

Instructions

Prepare the Fruit: Start by thoroughly washing the strawberries. Remove the green hulls and slice them into thin rounds. Next, peel the kiwis and cut them into small, even cubes. Once prepared, set the fruits aside for later use.

Mix the Yogurt Base: In a medium-sized mixing bowl, combine the Greek yogurt with honey (or maple syrup), vanilla extract, and a pinch of salt. Use a whisk or spatula to mix everything together until the consistency is smooth and all ingredients are well blended.

Combine Fruits and Yogurt: Carefully fold in the prepared strawberries and diced kiwi into the yogurt mixture. This gentle folding will ensure the fruit is evenly coated without breaking up the pieces.

Fill the Molds: Using a spoon, fill each cavity of the silicone molds or ice cube trays with the yogurt and fruit mixture. Fill each compartment nearly to the top. Lightly tap the tray on the countertop to release any trapped air bubbles that may have formed.

Freeze: Transfer the filled molds or trays to the freezer. Allow the bites to freeze for a minimum of 4 hours, or until they are completely solid to the touch.

Remove and Serve: Once frozen, carefully pop the yogurt bites out of the molds. If they seem to be sticking, run the outside of the mold briefly under warm water to help loosen them for easier release.

Enjoy: These refreshing bites can be enjoyed immediately as a delightful snack or dessert. Alternatively, store any leftover yogurt bites in an airtight container in the freezer, where they will stay fresh for up to 2 weeks.
