Ingredients

2 cups fresh strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon vanilla extract

1 cup Greek yogurt (can substitute with dairy-free yogurt)

1 cup granola (choose a variety with nuts and seeds for extra crunch)

1/2 cup unsweetened shredded coconut (optional)

1/4 cup chopped nuts (such as almonds or walnuts; optional)

Instructions

Prepare the Strawberries: In a medium mixing bowl, combine the sliced strawberries with the honey (or maple syrup) and vanilla extract. Gently toss the strawberries until they are evenly coated. Allow them to marinate for about 10-15 minutes, which will enhance their natural sweetness and flavor.

Create the Yogurt Base: In a separate bowl, mix the Greek yogurt with a dash of vanilla extract for added flavor. If you prefer your yogurt base sweeter, feel free to incorporate a little more honey or maple syrup at this stage.

Assemble the Cups: Line a muffin tin with paper liners or silicone cupcake molds to facilitate easy removal later. Spoon a generous dollop of the yogurt mixture into each cup, filling them approximately one-quarter full.

Add Strawberries: Next, take the marinated strawberries and add a layer on top of the yogurt in each cup, pressing them down slightly for even distribution.

Layer with Crunch: Sprinkle a layer of granola over the strawberries in each cup. Follow this with a tablespoon of shredded coconut and a sprinkle of chopped nuts, if using, for an added texture contrast.

Repeat the Layers: Continue building your cups by layering in more yogurt, followed by additional strawberries, granola, coconut, and nuts until the cups are filled nearly to the top. Ensure the final layer has a generous amount of crunchy toppings visible for a delightful finish.

Freeze the Cups: Carefully place the muffin tin in the freezer and let the cups freeze for at least 4 hours, or until they are completely solid.

Serve: Once fully frozen, remove the cups from the muffin tin. Allow them to sit at room temperature for a few minutes for easier removal of the liners. Enjoy immediately, or for later enjoyment, store them in an airtight container in the freezer for up to one week.
