1 cup crushed graham crackers (approximately 5-6 full sheets)

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, fresh lemon juice, lemon zest, honey or maple syrup, and vanilla extract. Using a whisk, mix thoroughly until the mixture is smooth and creamy. Give it a taste and adjust the sweetness as needed by adding more honey or syrup.

    Set Up the Stacks: Take a muffin tin or silicone molds and place them flat on your countertop. Spoon a tablespoon of the lemon yogurt mixture into the bottom of each cup. Use the back of the spoon to gently spread it into an even layer.

      Add Layers: Next, sprinkle a thin layer of crushed graham crackers over the yogurt layer, followed by a layer of your chosen granola. Repeat this layering process until you reach the top of each mold, ensuring the final layer is the yogurt mixture.

        Freeze: Seal the muffin tin or silicone molds with plastic wrap or a lid to prevent any freezer odors from affecting the stacks. Place them in the freezer and allow them to freeze for at least 4-6 hours, or until they are completely solid.
