Ingredients

6 large eggs

1/4 cup whole milk

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) so it's ready for baking once the frittata is prepared.

Sauté the Vegetables: In a large, oven-safe skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes or until it becomes translucent. Stir in the minced garlic and cook for an additional minute, ensuring it becomes fragrant but does not burn.

Prepare the Tomato Mixture: Add the halved cherry tomatoes to the skillet. Allow them to cook for about 2-3 minutes, just until they begin to soften. Season the mixture with salt and pepper to enhance the flavor.

Whisk the Eggs and Milk: In a medium mixing bowl, whisk together the eggs and whole milk until well blended. Then add the chopped basil, along with a pinch of salt and pepper, whisking again until everything is combined.

Combine Ingredients in Skillet: Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to ensure the tomatoes and onions are evenly distributed throughout the egg mixture.

Add Cheese: Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly on top of the egg and vegetable mixture, allowing for an extra cheesy finish.

Cook on Stovetop: Let the frittata cook on the stovetop for about 5 minutes, watching closely as the edges begin to set and firm up.

Bake to Finish: Carefully transfer the skillet to your preheated oven and bake for 15-20 minutes, or until the center is fully set and the top has developed a light golden color.

Cool and Serve: Once baked, remove the skillet from the oven and let the frittata cool for a few minutes. Slice it into wedges and, if desired, garnish with some extra fresh basil leaves for an elegant touch. This dish can be enjoyed warm or at room temperature.
