1/4 cup chia seeds

1 cup coconut milk (choose between canned or carton)

1/2 cup almond milk (or any milk of your preference)

2 tablespoons honey or maple syrup (customize sweetness to your liking)

1 teaspoon pure vanilla extract

A pinch of sea salt

1 cup assortment of fresh fruits (suggestions: diced mango, sliced kiwi, halved strawberries, and blueberries)

1/4 cup unsweetened shredded coconut

Fresh mint leaves (for garnish)

Instructions
 

In a medium mixing bowl, combine the chia seeds, coconut milk, almond milk, honey or maple syrup, vanilla extract, and a pinch of sea salt. Use a whisk to blend all the ingredients thoroughly until they are uniformly mixed.

    Let the mixture sit for about 5 minutes, then whisk again to break up any clumps of chia seeds that may have formed.

      Once well-mixed, cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or ideally overnight. This will allow the chia seeds to absorb the liquid and transform into a pudding-like consistency.

        After chilling, remove the bowl from the refrigerator. Give the pudding a good stir to ensure a smooth and creamy texture.

          To serve, take individual bowls or glasses and start layering the chia pudding and fresh fruits. Begin with a generous spoonful of chia pudding, followed by a layer of your selected fruits, and repeat until the containers are filled to your preference.
