Ingredients

4 boneless, skinless chicken thighs

2 large onions, thinly sliced

3 cloves garlic, minced

1 cup beef broth

1 cup Gruyère cheese, shredded

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon thyme (fresh or dried)

1 teaspoon balsamic vinegar

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Crusty bread (optional, for serving)

Instructions

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs generously with salt and pepper on both sides. Once the oil is shimmering, add the chicken to the skillet. Cook for approximately 6-7 minutes on each side until they are golden brown and have a nice crust. Once cooked, transfer the chicken to a plate and set it aside.

Caramelize the Onions: In the same skillet, lower the heat to medium and add the butter. Allow it to melt completely, then add the sliced onions along with a pinch of salt. Cook the onions slowly, stirring occasionally, for about 15-20 minutes. They should become soft, golden, and caramelized, creating a deep flavor.

Add Garlic and Thyme: Once the onions are beautifully caramelized, stir in the minced garlic and thyme. Cook for an additional minute, stirring frequently, until the garlic is aromatic and slightly golden.

Deglaze the Skillet: Carefully pour the beef broth and balsamic vinegar into the skillet. Use a wooden spoon to scrape the bottom of the skillet, lifting any browned bits of flavor into the sauce. Bring this mixture to a gentle simmer.

Nestle the Chicken: Return the seared chicken thighs to the skillet, ensuring they are covered in the sweet onion and broth mixture. Cover the skillet and let it simmer for about 5-10 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).

Add the Cheese: Remove the lid and generously sprinkle the shredded Gruyère cheese over the chicken and onions. Cover the skillet once more for 2-3 minutes, allowing the cheese to melt and become wonderfully bubbly.

Serve: Once the cheese is melted, remove the skillet from heat. Garnish the dish with freshly chopped parsley for a burst of color and flavor. Serve hot, paired with crusty bread for soaking up the delicious sauce, if desired.
