2 large sweet potatoes, sliced into 1/4-inch rounds

1 cup black beans, canned, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 jalapeño, thinly sliced

1 cup shredded sharp cheddar cheese (or a flavorful vegan cheese alternative)

1 avocado, diced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Salsa and/or sour cream, for topping (optional)

Instructions
 

Preheat the Grill: Heat your grill to medium-high, around 400°F (200°C). This ensures a perfect char on your sweet potatoes.
