8 oz (225g) pasta (choose from fettuccine, pappardelle, or spaghetti)

1 cup fig jam

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

½ teaspoon red pepper flakes (adjust to taste)

½ cup heavy cream

½ cup grated Parmesan cheese, plus extra for serving

Salt and freshly ground black pepper to taste

Fresh arugula or spinach for garnish

Chopped walnuts or pecans for an optional crunchy topping

Instructions
 

Cook the Pasta: Fill a large pot with water and add a generous amount of salt. Bring to a boil and add the pasta of your choice. Cook according to the package instructions until al dente. Before draining, reserve ½ cup of the pasta cooking water, then drain the pasta and set it aside.

    Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Once the oil shimmers, add the finely chopped onion. Sauté for about 4-5 minutes or until the onion becomes translucent. Next, stir in the minced garlic, chopped rosemary, and red pepper flakes, cooking for an additional minute until the garlic is fragrant.

      Incorporate Fig Jam: Lower the heat to low and introduce the fig jam to the skillet. Stir the mixture well, allowing the jam to soften and meld with the onion and garlic for a cohesive flavor.

        Cream it Up: Gradually pour in the heavy cream, stirring into the fig jam mixture until it becomes creamy and smooth. Allow the sauce to simmer for 2-3 minutes, ensuring it’s heated through. If the sauce appears too thick, add the reserved pasta water a little at a time until you achieve your desired consistency.

          Combine with Pasta: Add the cooked pasta directly into the skillet, tossing thoroughly so that each strand is coated in the rich sauce. Sprinkle the grated Parmesan cheese over the pasta and stir until it melts and is evenly incorporated. Season with salt and freshly ground black pepper to enhance the flavors.
