12 oz (340g) pasta (fusilli or penne recommended)

1 cup fig jam

2 cups ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese, divided

2 cups fresh spinach, chopped

1 large egg

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta thoroughly, then set aside to cool slightly.

      Prepare the Cheese Mixture: In a spacious mixing bowl, combine the ricotta cheese, 1/2 cup of the shredded mozzarella, and 1/4 cup of the grated Parmesan. Beat in the egg until smooth, then add the minced garlic, dried oregano, and red pepper flakes (if using). Season this mixture generously with salt and pepper.

        Incorporate Spinach: Gradually fold the chopped spinach into the cheese mixture, ensuring it is evenly blended in.
