2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup broccoli florets, cut into small pieces

1 cup sugar snap peas, ends trimmed

2 cloves garlic, finely minced

1 tablespoon fresh ginger, peeled and minced

3 tablespoons hoisin sauce

1 tablespoon sesame oil

Cooked rice or noodles, for serving

Sesame seeds, for garnish

Chopped green onions, for garnish

Marinate the Chicken: In a medium mixing bowl, combine the bite-sized chicken pieces with the soy sauce and cornstarch. Use your hands or a spatula to mix well, ensuring that each piece of chicken is evenly coated. Allow the chicken to marinate for approximately 15 minutes while you prepare the vegetables.

    Prep the Vegetables: While the chicken is marinating, wash and slice the bell peppers and cut the broccoli into small florets. Trim the ends of the sugar snap peas and set all the vegetables aside in a bowl.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering. Add the marinated chicken and stir-fry for about 5-7 minutes, or until the chicken is fully cooked, turning golden brown on the outside. Once cooked, remove the chicken from the skillet and place it on a plate to keep warm.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Introduce the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
