Ingredients

4 boneless, skinless chicken breasts

1 (12 oz) package of stuffing mix (herbed or traditional)

1 (15 oz) can of chicken broth

1 medium onion, diced

2 celery stalks, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried sage

Salt and pepper to taste

1 cup fresh or frozen mixed vegetables (such as carrots, peas, and corn)

1/2 cup cream of chicken soup (optional for added creaminess)

Fresh parsley, for garnish

Instructions

Prep the Chicken: Start by seasoning both sides of the chicken breasts generously with salt, pepper, dried thyme, rosemary, and sage. Once seasoned, arrange the chicken in the bottom of your crockpot.

Prepare the Vegetables: Heat a medium skillet over medium heat. Add the diced onion and celery, sautéing them until they become tender, which will take about 5 minutes. Once softened, stir in the minced garlic and continue to cook for another minute, allowing the garlic to become fragrant.

Mix the Stuffing: In a large mixing bowl, combine the stuffing mix with the chicken broth. Add in the mixed vegetables and the optional cream of chicken soup if you desire a creamier texture. Stir all the ingredients together until they are thoroughly combined.

Assemble in the Crockpot: Carefully pour the stuffing mixture over the seasoned chicken breasts in the crockpot, ensuring that they're evenly covered.

Cook: Cover the crockpot with its lid. Cook the chicken and stuffing on the low setting for 6 to 7 hours or on high for 3 to 4 hours. The chicken should be cooked through and tender when done.

Optional Crispiness: If you enjoy a crispy topping, increase the heat to high for the last 30 minutes of cooking. This will give the stuffing a delightful crunch.

Serve: Once the cooking time is complete, gently shred the chicken with two forks (if desired) and stir it back into the stuffing for a cohesive dish. Finish by garnishing with fresh parsley for a pop of color.

Enjoy: Serve the warm chicken and stuffing on plates. It pairs beautifully with a side of cranberry sauce or green beans for a comforting autumn meal!
