1 cup cooked breakfast sausage or chorizo, crumbled into bite-sized pieces

1 can (15 oz) black beans, drained and rinsed thoroughly

1 cup corn (frozen or canned)

1-2 fresh jalapeños, sliced (optional, for an extra kick)

2 cups grated cheese (sharp cheddar or a zesty Mexican blend work well)

1/4 cup fresh cilantro or chopped green onions, for garnish

Preheat the Oven: Set your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with cooking spray or oil to prevent sticking.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and whisk them together with the whole milk, salt, black pepper, garlic powder, and onion powder until the mixture is smooth and fully combined.
