Easy Turkey and Black Bean Enchiladas

1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (can be frozen or fresh)

1 small onion, finely diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1 cup salsa (use your favorite variety for a personalized touch)

8-10 corn tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

½ cup chopped fresh cilantro (optional, for garnish)

Sour cream (optional, for serving)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures that your enchiladas will bake evenly.

    Cook the Turkey: In a large skillet set over medium heat, add the ground turkey. Use a spatula to break it up as it cooks. Cook for about 5-7 minutes or until the turkey is fully browned and cooked through.

      Add Vegetables: Once the turkey is browned, add the diced onion and minced garlic to the skillet. Sauté these for an additional 3-4 minutes, or until the onion becomes soft and translucent, enhancing the overall flavor of the filling.

        Mix in Beans and Corn: Next, stir in the rinsed black beans, corn, ground cumin, chili powder, and half of the salsa. Allow this mixture to simmer on low heat for 5 minutes, stirring occasionally, to let the flavors combine beautifully. Remove the skillet from heat.

          Fill the Tortillas: Prepare a clean surface or cutting board. Take a corn tortilla and place about ¼ cup of the turkey-bean mixture in the center. Sprinkle a tablespoon of shredded cheese over the filling, then carefully roll up the tortilla. Place it seam-side down in a greased baking dish. Repeat this process with the remaining tortillas and filling.

            Top with Salsa & Cheese: Once all the enchiladas are snugly in the baking dish, pour the rest of the salsa over the top, ensuring each enchilada is covered. Then, generously sprinkle the remaining cheese over everything.

              Bake: Cover the baking dish with aluminum foil to keep moisture in, and bake in the preheated oven for 20 minutes. After this time, carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden.

                Garnish and Serve: Once done, take the dish out of the oven and let it cool for a few minutes. If desired, sprinkle fresh chopped cilantro over the top for a burst of color and flavor. Serve the enchiladas warm, with a side of sour cream for a creamy contrast.
