1 (15 oz) can diced tomatoes with green chilies

1 cup corn (frozen or canned)

1 cup shredded cheese (choose from cheddar, Monterey Jack, or a flavorful blend)

1 small onion, finely diced

2 cloves garlic, finely minced

1 tablespoon olive oil

Cook the Ground Meat: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely diced onion and sauté for about 3 minutes or until softened and translucent.
