1 lb (450g) fresh shrimp, peeled and deveined

1 cup fresh lime juice (approximately 8 limes)

1 medium red onion, finely diced

1 medium cucumber, finely diced

1 ripe avocado, diced

1 medium tomato, diced (seeds removed)

1 jalapeño pepper, finely chopped (seeds removed for a milder flavor)

½ cup fresh cilantro, chopped

Salt and pepper, to taste

1 teaspoon olive oil

Tortilla chips or mini avocado boats for serving

Prepare the Shrimp: In a medium bowl, combine the fresh shrimp with the lime juice, ensuring that the shrimp are fully submerged. Cover the bowl tightly with plastic wrap and refrigerate for about 30 minutes, or until the shrimp turn pink and opaque, indicating they have 'cooked' in the lime juice.

    Mix the Vegetables: In a separate large bowl, add the finely diced red onion, cucumber, avocado, diced tomato, chopped jalapeño, and cilantro. Drizzle the mixture with olive oil, then season with a pinch of salt and pepper. Gently toss all the ingredients together until well combined, being careful not to mash the avocado.
