Easy Sheet Pan Fajita Chicken

1.5 lbs boneless, skinless chicken breasts, cut into thin strips

2 bell peppers (any colors), sliced into thin strips

1 large red onion, sliced into wedges

3 tablespoons olive oil

2 tablespoons fajita seasoning (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and freshly cracked black pepper to taste

Juice of 1 lime

Fresh cilantro, chopped, for garnish

Optional toppings: sour cream, guacamole, shredded cheese, and tortillas

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C). To maintain a clean workspace, line a large sheet pan with parchment paper.

    Combine Chicken and Vegetables: In a spacious mixing bowl, add the chicken strips along with the sliced bell peppers and wedges of red onion.

      Season the Mixture: Drizzle the olive oil over the chicken and vegetables. Sprinkle in the fajita seasoning, garlic powder, ground cumin, and a good pinch of salt and freshly cracked black pepper. Squeeze the juice of the lime over everything. Use your hands or a spatula to mix thoroughly until all ingredients are well coated with the spices and oil.

        Spread on the Sheet Pan: Transfer the seasoned chicken and vegetable mixture onto the prepared sheet pan. Spread it out into a single, even layer to ensure even roasting, allowing some space between the pieces.
