Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain white rice

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes with green chilies, undrained

1 can (15 oz) black beans, drained and rinsed thoroughly

1 cup corn kernels, can be fresh, frozen, or canned

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 teaspoon salt, or to taste

1/4 teaspoon black pepper

2 1/2 cups chicken broth

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions

Sauté the Chicken: In a large skillet or sauté pan, heat the olive oil over medium heat. Add the diced chicken thighs, ensuring they are spread out in a single layer. Season with salt, black pepper, ground cumin, smoked paprika, and chili powder. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside in a bowl.

Cook the Vegetables: In the same skillet, add the finely chopped onion. Sauté for around 3 minutes until the onions turn translucent. Then, add the minced garlic and diced bell pepper, stirring frequently for another 2-3 minutes until the pepper softens and the garlic is fragrant.

Combine Ingredients: Return the browned chicken to the skillet. Then, stir in the long-grain rice, diced tomatoes (with their juices), black beans, corn, and chicken broth. Mix all ingredients together thoroughly, ensuring the rice is well distributed.

Simmer: Increase the heat and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pan with a lid, and allow it to simmer for 20-25 minutes. During this time, resist the urge to lift the lid, as it helps the rice cook evenly and absorb all the flavors.

Fluff and Serve: After the simmering time, remove the pan from heat and keep it covered for an additional 5 minutes. This resting time will allow the rice to finish cooking. Afterward, use a fork to gently fluff the rice and chicken mixture. Serve the dish garnished with fresh chopped cilantro and lime wedges for an added burst of flavor.

Enjoy your delicious Spicy Fiesta Chicken & Rice, a vibrant and flavorful dish that's sure to be a hit at your dinner table!
