2 large bell peppers (any color you prefer)

2 cups cooked chicken, shredded or diced

1/2 cup Greek yogurt (or mayonnaise for a creamier texture)

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup grapes, halved (or diced apples for added crunch)

1/4 cup walnuts or pecans, chopped (optional for a nutty flavor)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice
