2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper to taste

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 medium onion, sliced into thin rings

4 large flour tortillas

1 cup shredded cheese (sharp cheddar or a Mexican blend)

1/2 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped (optional for garnish)

Marinate the Chicken: In a medium mixing bowl, combine the thinly sliced chicken breasts with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, and a pinch of salt and pepper. Toss the chicken pieces until they are evenly coated with the marinade. Allow the chicken to marinate for about 10 minutes while you prepare the bell peppers and onions.

    Sauté the Vegetables: Heat a splash of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the sliced onions and bell peppers.
