1 pound ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with their juices)

1 small onion, finely diced

1 bell pepper (red or green), finely diced

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon sea salt (or to taste)

½ teaspoon black pepper

1 cup beef broth or water

2 tablespoons olive oil

Optional toppings: shredded cheese, sour cream, diced green onions, fresh cilantro

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely diced onion and bell pepper.
