Ingredients

300g udon noodles

250g shiitake mushrooms, sliced

150g cremini mushrooms, sliced

3 tablespoons miso paste (preferably white or yellow)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

2 cloves garlic, minced

1 inch ginger, grated

4 green onions, chopped (white and green parts separated)

2 cups vegetable broth

1 tablespoon rice vinegar

1 teaspoon sugar

1 teaspoon red pepper flakes (optional, for heat)

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Instructions

Cook the Udon Noodles: In a large pot, bring water to a boil. Add the udon noodles and cook according to the package instructions, usually about 4-6 minutes. Once cooked, drain the noodles and rinse them under cold water to halt the cooking process. Set aside.

Sauté the Mushrooms: In a large skillet or wok, heat the olive oil over medium heat. Add the sliced shiitake and cremini mushrooms to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the mushrooms have released their moisture and turned a lovely golden brown.

Incorporate Aromatics: To the skillet, add the minced garlic, grated ginger, and the white parts of the chopped green onions. Stir continuously for 1-2 minutes, or until the mixture becomes fragrant.

Prepare the Miso Broth: In a separate small bowl, whisk together the miso paste, soy sauce, sesame oil, rice vinegar, and sugar until smooth. Gradually pour in the vegetable broth while whisking, ensuring everything is well combined.

Combine Broth and Mushrooms: Pour the miso broth mixture over the sautéed mushrooms in the skillet. Increase the heat slightly to bring the mixture to a gentle simmer. Allow it to cook for about 5 minutes, allowing the flavors to meld beautifully.

Add Udon Noodles: Carefully add the cooked udon noodles to the simmering broth and mushrooms. Gently stir to coat the noodles evenly in the broth, ensuring they are heated through. If you'd like a bit of heat, sprinkle in the red pepper flakes at this stage.

Serve and Garnish: Remove the skillet from heat. Serve the miso mushroom udon in individual bowls, garnishing with the green tops of the chopped green onions, a sprinkle of sesame seeds, and fresh cilantro if desired for an added burst of flavor.
