Ingredients

300g fresh udon noodles

2 tablespoons miso paste (yellow or red)

1 tablespoon soy sauce

1 tablespoon sesame oil

2 cups mixed mushrooms (shiitake, cremini, and oyster), sliced

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon grated ginger

4 cups vegetable broth

1 cup baby bok choy, halved

2 green onions, thinly sliced (for garnish)

1 teaspoon sesame seeds (for garnish)

Fresh cilantro (optional, for garnish)

Instructions

Prepare Udon Noodles: Begin by bringing a large pot of water to a rolling boil. Once boiling, add the udon noodles and cook them according to the package instructions, usually around 5-7 minutes. After cooking, drain the noodles and rinse them under cold water to halt the cooking process. Set the rinsed noodles aside.

Sauté Aromatics: In a large pot, heat the sesame oil over medium heat. Add the finely chopped onion and sauté for approximately 3-4 minutes until the onion turns translucent. Next, add the minced garlic and grated ginger, continuing to cook for an additional 1-2 minutes until their aromas are released.

Cook the Mushrooms: Incorporate the sliced mushrooms into the pot with the aromatics. Sauté the mushrooms for about 5-7 minutes, stirring occasionally, until they become tender and begin to brown gently.

Make the Broth Mixture: In a separate bowl, mix the miso paste with the soy sauce and a ladle of hot vegetable broth. Whisk the ingredients together until the mixture is smooth and free of lumps. Pour this flavorful mixture back into the pot with the sautéed mushrooms and onions.

Add Broth and Simmer: Pour the remaining vegetable broth into the pot and bring the mixture to a gentle simmer. Allow it to cook for 5-10 minutes, giving the flavors ample time to meld and deepen.

Incorporate Bok Choy: Add the halved baby bok choy to the simmering pot, cooking for an additional 2-3 minutes. The bok choy should wilt slightly while still maintaining its vibrant, fresh green color.

Combine Noodles with the Broth: Gently fold the cooked udon noodles into the pot, ensuring that each strand is thoroughly coated in the warm, earthy miso broth. Allow the dish to heat through for about 2 minutes.

Serve the Dish: Ladle the earthy miso mushroom udon into individual bowls. Garnish each serving with sliced green onions, a sprinkle of sesame seeds, and fresh cilantro if desired for an extra burst of flavor.

Enjoy Your Creation: Serve the udon hot, relishing the rich, umami flavors of this comforting and hearty dish!
