Ingredients

2 medium cucumbers, sliced thinly into rounds

1 medium red onion, sliced thinly

1/4 cup apple cider vinegar

2 tablespoons extra virgin olive oil

1 teaspoon granulated sugar

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon garlic powder

1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)

Optional: 1 cup cherry tomatoes, halved (for added color and flavor)

Instructions

Begin by placing the thinly sliced cucumbers and red onion in a large mixing bowl. If you choose to include cherry tomatoes, gently fold them into the mixture at this stage for an eye-catching pop of color.

In a separate small bowl, create your dressing by whisking together the apple cider vinegar, extra virgin olive oil, granulated sugar, sea salt, freshly ground black pepper, garlic powder, and chopped dill. Continue whisking until both the sugar and salt have completely dissolved, resulting in a smooth and balanced dressing.

Once your dressing is ready, pour it over the cucumber and onion mixture. Use a spoon or your hands to toss the vegetables gently, ensuring that they are thoroughly coated with the tangy dressing.

To enhance the flavors further, cover the bowl with plastic wrap or transfer the salad into an airtight container. Place it in the refrigerator and let it chill for at least 30 minutes. This resting period allows the vegetables to soak up the flavors.

Before serving, give the salad a quick toss to redistribute the dressing. Taste and adjust the seasoning, adding more salt or pepper if desired. Serve the salad chilled, either as a side dish or a light and refreshing appetizer. Enjoy!
