As more people seek to reduce their carbohydrate intake without sacrificing flavor, innovative ingredients such as zucchini noodles, or zoodles, have emerged as a versatile and delicious option.

Crunchy Zoodle Fries

A crispy and healthy alternative to fries made from zucchini.

Ingredients
  

  • 4.0 medium zucchinis
  • 0.25 cup cornstarch
  • 1.0 teaspoon garlic powder
  • 1.0 teaspoon onion powder
  • 1.0 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1.0 tablespoon olive oil

Instructions
 

  • Wash the zucchinis and trim off the ends. Using a spiralizer, create zucchini noodles (zoodles). If you don't have a spiralizer, you can use a julienne peeler or a box grater to create thin strips.
  • Place zoodles in a clean kitchen towel or paper towels. Sprinkle a little salt over them and let them sit for about 10-15 minutes to draw out excess moisture.
  • After 15 minutes, wring out the zoodles in the towel to remove the moisture. Transfer them to a large bowl.
  • In a small bowl, mix together cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. Sprinkle this mixture over the zoodles, adding the olive oil last. Toss everything together until the zoodles are evenly coated.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • Lightly spray the air fryer basket with cooking spray. Place the coated zoodles in the basket in a single layer, making sure they are not overcrowded. Air fry for 10-12 minutes, shaking the basket halfway through, until they are golden brown and crispy.
  • Once done, remove the zoodle fries from the air fryer and let them cool for a minute. If desired, sprinkle with grated Parmesan cheese and fresh herbs before serving.
  • Serve immediately as a snack or side dish, paired with your favorite dipping sauce, like marinara or tzatziki.
