Crunchy Taco Lettuce Wraps

1 pound ground turkey or beef

1 packet taco seasoning (or homemade blend: 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika)

1 cup diced bell peppers (a mix of red, yellow, and green for color)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded cheddar cheese

1 cup salsa

1/4 cup fresh cilantro, chopped

1 head of iceberg or butter lettuce, leaves carefully separated

Lime wedges, for serving

Salt and pepper to taste

Instructions
 

Cook the Meat: Heat a large skillet over medium heat. Add the ground turkey or beef and cook for 7-10 minutes, breaking it apart with a wooden spoon until fully browned and no longer pink. Drain any excess fat if necessary.

    Add Seasoning: Sprinkle the taco seasoning over the cooked meat and pour in 1/4 cup of water. Stir to ensure the meat is evenly coated with seasoning. Allow the mixture to simmer for about 5 minutes, stirring occasionally, until it thickens slightly.

      Combine Veggies: Add the diced bell peppers, black beans, and corn to the skillet with the meat mixture. Stir well and let cook for an additional 3-4 minutes, or until the peppers are just tender yet still crisp.

        Assemble Lettuce Wraps: Take a sturdy lettuce leaf and place it on a plate. Spoon a generous portion of the meat and veggie mixture into the center of the leaf. Top with halved cherry tomatoes, diced avocado, shredded cheese, a dollop of salsa, and a sprinkle of fresh cilantro for added flavor.
