Ingredients

2 lbs boneless, skinless chicken thighs (or breasts)

4 cups diced mixed vegetables (such as carrots, peas, corn, and green beans)

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1/4 cup all-purpose flour

1 package (2 sheets) refrigerated pie crusts or puff pastry

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Begin by placing the chicken thighs at the bottom of the crockpot. liberally season the chicken with salt and pepper to enhance the flavor.

Add Veggies and Aromatics: Layer the diced mixed vegetables, finely chopped onion, and minced garlic over the seasoned chicken, ensuring an even distribution for balanced flavor.

Create the Broth Mix: In a medium mixing bowl, whisk together the low-sodium chicken broth, heavy cream, dried thyme, dried rosemary, all-purpose flour, along with a pinch of salt and pepper until the mixture is smooth and well combined. Pour this mixture over the chicken and vegetables in the crockpot.

Cook: Securely cover the crockpot with its lid and set it to cook on low for about 6-8 hours or on high for 4-5 hours. Once the cooking time elapses, check that the chicken is fully cooked; then shred it using two forks and stir everything together to create a cohesive filling.

Prepare the Pie Crust: About 30 minutes before you plan to serve, preheat your oven according to the package instructions for the pie crust. Lightly flour your countertop, then roll out the pie crusts or puff pastry until they are thin and ready for topping.

Assemble: Transfer the hearty chicken filling into a large baking dish. Gently lay the rolled-out pie crust on top, ensuring it covers the filling completely. Make sure to cut several slits in the crust to allow steam to escape during baking. For a beautiful golden color, optionally brush the top of the crust with a beaten egg.

Bake: Place the prepared baking dish in the preheated oven and bake as per the crust instructions, typically around 25-30 minutes, or until the crust turns golden brown and the filling is bubbling.

Serve: Once the crust is perfectly golden and flaky, remove the baking dish from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley for added color and flavor. Serve hot and enjoy the warmth and comfort of your delicious chicken pot pie!
