Ingredients

1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon freshly grated ginger

2 cloves garlic, finely minced

2 tablespoons cornstarch

1/2 cup panko breadcrumbs

2 tablespoons vegetable oil (for frying)

1 tablespoon sesame seeds (for garnish)

Sliced green onions (for garnish)

Instructions

Marinate the Salmon: In a medium mixing bowl, combine the soy sauce, mirin, brown sugar, sesame oil, grated ginger, and minced garlic. Whisk until the brown sugar is fully dissolved. Add the salmon cubes to the marinade, ensuring they are well coated. Allow them to marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for a deeper flavor.

Prepare for Coating: After marinating, carefully remove the salmon cubes from the marinade and place them on a plate. Use a paper towel to pat them dry thoroughly; this step is crucial for achieving a crispy texture when frying.

Coat the Salmon: In a shallow dish, combine the cornstarch with a pinch of salt. In a separate bowl, pour in the panko breadcrumbs. Take each salmon cube, dredge it in cornstarch, shaking off the excess, then roll it in the panko breadcrumbs until evenly coated.

Fry the Salmon: Heat the vegetable oil in a large skillet over medium heat. When the oil is shimmering, add the coated salmon cubes in a single layer (you may need to fry them in batches to avoid overcrowding). Cook for 2-3 minutes on each side, or until they are golden brown and crispy. Once cooked, use a slotted spoon to transfer the salmon to a plate lined with paper towels to absorb any excess oil.

Glaze the Salmon: While the salmon is frying, take the leftover marinade and pour it into a small saucepan. Heat it over medium heat and bring it to a simmer. Allow it to cook for about 5 minutes until it reduces slightly and thickens. Stir occasionally to prevent burning.

Combine and Serve: Once the salmon cubes are crispy, drizzle the reduced teriyaki glaze over them in the skillet. Gently toss the salmon bites until they are well coated in the glaze. Transfer the glazed salmon to a serving platter.

Garnish and Enjoy: To finish, sprinkle the crispy salmon with sesame seeds and sliced green onions. Serve immediately, either alone or alongside steamed rice or a fresh side salad for a delightful meal.
