1 cup cooked rice (you can use white or brown depending on your preference)

1 cup corn kernels (these can be fresh, frozen, or canned)

1 packet taco seasoning (about 1 ounce)

1 cup salsa (choose a flavor profile that suits your taste – mild or spicy)

1 cup shredded cheddar cheese (or any cheese of your liking)

1 tablespoon olive oil (plus extra for brushing)

Fresh cilantro, chopped, for garnish

Preheat the Oven: Start by preheating your oven to 375°F (190°C) so it's ready when you need to bake the peppers.

    Prepare the Peppers: Take the bell peppers and slice off the tops. Carefully remove any seeds and membranes from the inside. Brush the exterior of each pepper lightly with olive oil and arrange them upright in a suitable baking dish.

      Cook the Filling: In a large skillet over medium heat, add the ground beef (or turkey). Cook until it's nicely browned, ensuring to break it apart using a wooden spoon to achieve an even texture.

        Mix Ingredients: To the skillet, stir in the taco seasoning, black beans, cooked rice, corn, and your choice of salsa. Allow the mixture to simmer for 5-7 minutes, stirring occasionally, until everything is heated through and well combined.
