Ingredients

2 large sweet potatoes

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

1 cup canned black beans, rinsed and drained

1 cup shredded sharp cheddar cheese (or a vegan cheese alternative)

1 ripe avocado, diced

½ cup fresh tomatoes, diced

¼ cup sliced jalapeños (fresh or pickled for a kick)

¼ cup sour cream or Greek yogurt (optional for creaminess)

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions

Prepare the Sweet Potatoes: Begin by preheating your oven to 400°F (200°C). Rinse the sweet potatoes under cold water, then peel them with a vegetable peeler. Slice the sweet potatoes into thin rounds or wedges, aiming for about 1/4 inch in thickness for consistent cooking.

Season the Chips: In a large mixing bowl, combine the sweet potato slices with the olive oil, garlic powder, smoked paprika, chili powder, along with salt and pepper. Toss gently until each slice is evenly coated in the seasoning mixture.

Bake the Chips: Arrange the seasoned sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping the slices halfway through the cooking time. The chips are ready when they are crispy and golden brown.

Assemble the Nachos: After baking, allow the sweet potato chips to cool for a few minutes on the baking sheet. Layer the crispy chips in a large oven-safe platter or baking dish. Sprinkle the rinsed black beans evenly over the chips, followed by the shredded cheddar cheese.

Melt the Cheese: Return the loaded platter to the oven and bake for an additional 5-7 minutes, or until the cheese is melted, bubbly, and slightly browned.

Garnish and Serve: Remove the nachos from the oven and immediately top with diced avocado, diced tomatoes, and sliced jalapeños. If desired, add dollops of sour cream or Greek yogurt for a creamy finish. Garnish with chopped fresh cilantro before serving. Don’t forget to provide lime wedges on the side for a refreshing squeeze of zesty flavor!
