Ingredients

1 lb ground beef (or ground turkey for a lighter option)

1 packet taco seasoning mix

1 cup cooked rice (optional for added texture)

1 can (15 oz) black beans, rinsed and drained

1 ½ cups shredded lettuce

1 ½ cups diced tomatoes

1 cup shredded cheese (cheddar or a taco blend)

½ cup sour cream

1 ripe avocado, diced

10 small crunchy taco shells

Cooking oil (for frying the taco shells)

Fresh cilantro leaves (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Filling:

    - In a large skillet, heat over medium heat. Add the ground beef (or turkey) and cook, breaking it apart with a spatula, until browned and cooked through, approximately 5-7 minutes. Drain any excess fat.

      - Add the packet of taco seasoning to the meat, along with the amount of water specified on the seasoning packet. Stir to combine and allow it to simmer for about 5 minutes until the sauce thickens.

        - If using, stir in the cooked rice and black beans, mixing thoroughly. Allow to cook for an additional 2-3 minutes to heat everything through. Remove from heat and set aside.

          Crispy Taco Shells:

            - In a deep skillet or pot, pour in enough cooking oil to heat about 1 inch deep, then heat over medium-high heat.

              - Once the oil is hot, carefully place each taco shell in the oil, frying for about 30-45 seconds, until they turn golden and crispy. Use tongs to hold the shells upright while frying to maintain their shape.

                - Transfer the fried taco shells to a plate lined with paper towels to absorb any excess oil.

                  Assemble the Tacos:

                    - Begin filling each crispy taco shell with a generous spoonful of the beef and bean mixture.

                      - Layer on the shredded lettuce, diced tomatoes, and shredded cheese.

                        - Add a dollop of sour cream and sprinkle with diced avocado.

                          - Finish by garnishing with fresh cilantro leaves for vibrant flavor.

                            Serve:

                              - Serve the tacos warm, accompanied by lime wedges for a zesty squeeze on top. Enjoy these crunchy and delicious tacos, perfect for a fun school lunch!
