1 lb (450g) large portobello mushrooms or white button mushrooms

1 cup all-purpose flour

2 large eggs

1 cup panko bread crumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for extra heat)

Cooking spray or a drizzle of olive oil

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat Your Oven: Start by preheating your oven to 425°F (220°C) and line a baking sheet with parchment paper. This will make for easy cleanup and prevent the fries from sticking.

    Prepare the Mushrooms: Gently clean the mushrooms using a damp cloth to remove any dirt. Remove the stems and slice the mushroom caps into fry-style shapes, about ½ inch thick.

      Establish Your Breading Station: Set up three shallow dishes:

        - In the first dish, add the all-purpose flour.

          - In the second dish, beat the two large eggs until fully mixed.

            - In the third dish, combine the panko bread crumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using).

              Bread the Mushroom Fries:

                - Start by dipping each mushroom slice into the flour, shaking off any excess.

                  - Next, immerse the floured mushroom slice into the beaten eggs, ensuring it’s completely coated.

                    - Lastly, press the mushroom slice into the panko-Parmesan mixture, making sure it’s fully coated on all sides. Place the breaded mushroom fries carefully on the prepared baking sheet without overcrowding.

                      Bake Until Golden and Crispy: Once all the mushroom slices are breaded, give them a light spray with cooking spray or drizzle them with olive oil. This helps achieve a beautiful crispiness. Bake in your preheated oven for approximately 20-25 minutes, turning the fries halfway through the cooking time, until they are golden brown and crispy.
