1/2 teaspoon smoked paprika

Prepare the Eggplant:

    - Place the eggplant cubes into a colander and sprinkle them generously with salt. Allow the eggplant to sit for approximately 30 minutes.       Make the Feta Mixture:

          Coat the Eggplant:
