1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

4 cups romaine lettuce, chopped into bite-sized pieces

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (or a vegan alternative if desired)

1/4 cup low-fat Caesar dressing (or homemade variant)

Lemon wedges, for serving

Prepare the Chickpeas: Begin by preheating your oven to 400°F (200°C). In a medium mixing bowl, combine the drained and rinsed chickpeas with olive oil, garlic powder, smoked paprika, and a generous pinch of salt and black pepper. Stir thoroughly until the chickpeas are evenly coated with the seasoning mix.

    Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for approximately 25-30 minutes, or until they are golden brown and crispy. Be sure to shake the pan halfway through the roasting time to promote even cooking.
