1 medium head of green cabbage, outer leaves removed and cut into 1-inch pieces

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon ground cumin

Salt and freshly cracked black pepper, to taste

2 tablespoons sesame seeds (optional)

2 green onions, finely chopped (for garnish)

Sriracha or soy sauce (for serving)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.

    Prepare the Cabbage: Rinse the cabbage pieces thoroughly under cold water to remove any dirt. Pat them dry with a kitchen towel—making sure they are as dry as possible, as this will help achieve maximum crispiness in your chips.

      Season the Cabbage: In a spacious mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, ground cumin, salt, and freshly cracked black pepper. Add the cabbage pieces to the bowl and gently toss them until they are fully coated in the seasoning mix.

        Spread on Baking Sheet: Arrange the seasoned cabbage pieces in a single layer on the prepared baking sheet. Make sure they are not overcrowded or overlapping, which will help them cook evenly and become crispy.

          Bake: Place the baking sheet into the preheated oven and bake for 15-20 minutes. Keep an eye on them—your goal is to achieve a golden brown color and a crispy texture. At the halfway mark, gently toss the cabbage chips to promote even cooking.
