Ingredients

12 large pasta sheets (such as lasagna)

200g feta cheese, crumbled

1 cup ricotta cheese

1 cup fresh spinach, finely chopped

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for heat)

2 cups marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and freshly ground black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Set your oven temperature to 400°F (200°C) so it can preheat while you prepare the other components.

Prepare the Filling: In a mixing bowl, combine the crumbled feta cheese, ricotta cheese, finely chopped spinach, garlic powder, dried oregano, red pepper flakes (if using), and a pinch of salt and pepper. Stir until all ingredients are thoroughly mixed and the filling is creamy and well-blended.

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Carefully add the pasta sheets and cook them according to the package instructions until they reach an al dente texture, which usually takes about 5-7 minutes. Once cooked, drain the pasta and spread the sheets on a clean kitchen towel to cool slightly.

Assemble the Rolls: Take one cooled pasta sheet and place it on a flat surface. Spoon approximately 2 tablespoons of the prepared filling onto one end of the sheet. Roll the sheet tightly from the filled end to create a roll. Repeat this process with the remaining pasta sheets and filling mixture.

Prepare the Marinara Sauce: In a baking dish, spread 1 cup of marinara sauce evenly across the bottom. Position the pasta rolls seam-side down in the dish, arranging them snugly next to each other.

Add Remaining Sauce and Cheese: Pour the remaining marinara sauce over the top of the arranged pasta rolls, ensuring every roll is covered. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the sauce for a cheesy crust.

Drizzle with Olive Oil: Drizzle olive oil over the cheese topping to enhance crispiness and flavor during baking.

Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes; then remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted, bubbly, and golden brown.

Garnish and Serve: Once baked, carefully take the dish out of the oven and allow it to cool for a few minutes. For an elegant finish, garnish the rolls with fresh basil leaves before serving.
