Ingredients

8 oz pasta of your choice (penne or fusilli are excellent options)

2 medium zucchinis, sliced into half-moons

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 teaspoon olive oil

1 teaspoon Italian seasoning (a blend of dried oregano, basil, and thyme)

Salt and pepper to taste

½ cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves, torn, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until it reaches al dente texture. Make sure to reserve 1 cup of the pasta water before draining the pasta. Set the drained pasta aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced zucchinis and sauté for about 4-5 minutes, or until they start to soften. Next, add the minced garlic and the halved cherry tomatoes. Continue cooking for another 2-3 minutes, stirring often, until the garlic becomes fragrant and the tomatoes start to burst and release their juices.

Build the Sauce: Carefully pour in the vegetable broth, bringing the mixture to a gentle simmer. Lower the heat to maintain a soft simmer, then stir in the heavy cream. Allow the sauce to simmer for about 5 minutes, stirring occasionally to blend the flavors.

Combine Everything: Once the sauce is simmering, add the cooked pasta to the skillet. Toss everything together to ensure the pasta is well-coated in the creamy sauce. If the sauce appears too thick, gradually add some reserved pasta water, a little at a time, until you achieve your desired creaminess.

Season: Stir in the Italian seasoning, along with salt and pepper to taste. Finally, add the grated Parmesan cheese, mixing well until it fully melts into the sauce and creates a rich, creamy texture.

Serve: Remove the skillet from the heat. Garnish your delicious dish with freshly torn basil leaves, and sprinkle with additional Parmesan cheese if you like. Serve hot and savor every bite!
