2 tablespoons olive oil

1 lb chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup sun-dried tomatoes, chopped

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once done, reserve 1 cup of the pasta water, drain the remaining water, and set the pasta aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Once the oil is shimmering, add the cubed chicken pieces. Season evenly with Italian seasoning, salt, and pepper. Cook the chicken for 5-7 minutes, stirring occasionally, until it is golden brown and cooked through. Once cooked, remove the chicken from the skillet and set it aside on a plate.

      Prepare Garlic and Tomatoes: Using the same skillet, add the minced garlic. Sauté for about 30 seconds, or until fragrant and lightly golden, being careful not to burn it. Add in the halved cherry tomatoes and chopped sun-dried tomatoes. Cook for approximately 3-4 minutes, stirring gently, until the tomatoes have softened slightly.

        Create the Creamy Sauce: Reduce the heat to low and carefully pour in the heavy cream. Stir continuously as the cream heats up and begins to simmer. Allow it to simmer for 2-3 minutes until it thickens just a bit.
