12 oz (340g) pasta (penne or fusilli recommended)

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for some heat)

1 cup heavy cream

4 cups fresh spinach

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set aside, remembering to reserve about ½ cup of the starchy pasta water.

    Sauté Garlic: Heat olive oil in a large skillet over medium heat. Once the oil is shimmering, add the minced garlic. Sauté for approximately 1 minute, or until the garlic is golden and fragrant—but be careful not to burn it.

      Make the Sauce: Pour in the crushed tomatoes along with the dried basil, oregano, and optional red pepper flakes. Stir everything together and let the mixture simmer for about 5-7 minutes. This will allow the flavors to meld and the sauce to thicken slightly.
