1 lb (450g) potato gnocchi (store-bought or homemade)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 oz / 400g) crushed tomatoes

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust according to spice preference)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: 1 cup baby spinach or kale for added nutrition

Cook the Gnocchi: Bring a large pot of salted water to a rolling boil. Carefully add the gnocchi and cook as directed on the package. They will be done when they float to the top (about 2-3 minutes). Use a slotted spoon to transfer the gnocchi to a plate and set aside. Don’t forget to reserve 1/2 cup of the pasta water before draining.

    Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Once heated, add the finely chopped onion. Sauté for about 5 minutes, stirring occasionally, until the onion is softened and translucent. Add in the minced garlic and cook for an additional minute, stirring until fragrant.

      Add Tomatoes and Spices: Pour in the crushed tomatoes, ensuring they’re well distributed in the skillet. Stir in the dried basil, oregano, and red pepper flakes. Season the mixture with salt and pepper. Allow it to simmer for about 5 minutes, letting all the flavors meld beautifully.

        Make it Creamy: Reduce the heat to low and gently stir in the heavy cream. Allow the mixture to become a luscious, silky sauce.
