1 cup sun-dried tomatoes in olive oil, drained and roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil (reserve this from the sun-dried tomatoes jar)

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for added heat)

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Additional grated Parmesan cheese, for serving

Cook the Pasta: Begin by boiling a large pot of salted water. Once boiling, add your pasta and cook according to the package instructions until it reaches an al dente texture. After cooking, reserve 1/2 cup of the pasta water and then drain the rest, setting the pasta aside.

    Sauté the Garlic: In a large skillet over medium heat, pour in the olive oil you reserved from the sun-dried tomatoes. Add the minced garlic and sauté for about 1-2 minutes, just until it becomes fragrant. Be careful not to let the garlic brown or burn, as this can lead to a bitter taste.

      Incorporate Sun-Dried Tomatoes: Next, add the roughly chopped sun-dried tomatoes to the skillet along with the Italian seasoning. Stir well and cook for an additional 2-3 minutes, allowing the tomatoes to warm through and infuse their flavor.

        Create the Creamy Sauce: Pour the heavy cream into the skillet and bring the mixture to a gentle simmer over medium heat. Gradually add the grated Parmesan cheese, stirring continuously until it’s fully melted and integrates into the sauce.
